STRAWBERRY + MATCHA COLLAGEN ICE CREAM

The perfect summer frozen yoghurt does exist…bringing my love of matcha and inspiration from the viral strawberry-matcha combination into a delicious frozen yoghurt. Filled with organic frozen strawberries from Mt.Wilder berries, Nya rituals ceremonial grade matcha and Imbibe miracle collagen for a skin loving combination you need in your life.

INGREDIENTS

Strawberry layer

1 cup Mt.Wilder frozen strawberries

2 tablespoons Imbibe Miracle collagen

2 tablespoons organic maple syrup

1 teaspoon organic pure vanilla bean paste

1 cup Coyo Organic coconut yoghurt

Matcha layer

2-3 teaspoons Nya rituals organic ceremonial grade matcha powder

1/2 cup Coco Organic coconut yoghurt

2 tablespoons maple syrup

This makes roughly 6-8 depending on your mould size

STEPS

  1. Add frozen strawberries, Imbibe miracle collagen, maple syrup, pure vanilla bean paste and coconut yoghurt to a blender and combine until smooth.

  2. Place 3/4 of the way up the mould to leave room for your matcha layer, add in the ice-block sticks and place in the freezer to set completely (3hrs minimum).

  3. Combine matcha powder, maple syrup and coconut yoghurt into a bowl and stir until smooth. Make sure you remove any lumps from your matcha by using a small sieve.

  4. Add the matcha blend to the remainder of the mould and place into the freezer until set.

Beauty notes: Although not necessary, adding the Collagen powder adds an extra skin health boost to your delicious treat.
