COLLAGEN MARSHMELLOWS
INGREDIENTS
3 tablespoons IMBIBE MIRACLE COLLAGEN
3 tablespoons Nutra Organics gelatin powder
1/2 cup filtered water
1/2 cup filtered water
pinch of salt
1 cup raw honey or maple syrup
2 teaspoons vanilla extract
Organic arrowroot powder for dusting
kitchen aid mixer or electric hand whisk
STEPS
The key is to make sure everything is prepped and ready, as the setting process can be quite quick.
1. Line a baking tray with non-toxic baking paper, then lightly coat the bottom with arrowroot powder as this will prevent the marshmallow from sticking to the paper.
2. Pour 1/2 a cup of filtered water, gelatin and collagen powder into a bowl and evenly mix - set aside to ‘bloom’ for 10mins.
3. Pour 1/2 cup of filtered water, honey/maple syrup and salt into a saucepan and let boil and bubble for approximately 8mins (If you have a cooking thermometer it must reach a heat point of 240degrees) I have timed this for you and it averages around 8mins - as long as its boiling and bubbling you are on the right track.
4. If you own a kitchen aid mixer (lucky you) add the gelatin mixture to the bowl and turn on a medium setting. You’re going to slowly add in the hot honey mixture, pouring a little at a time to blend evenly. If you are like me and have an electric hand whisk, I poured the honey mixture into a pouring jug so I could slowly add it in while whisking with the other hand.
5. Add the vanilla extract while whisking
6. Whisk at a medium setting for around 8-10minutes. The mixture will slowly start to form into a creamy and white fluffy cloud. Keep checking the mixture by stopping and seeing if it forms a peak. The trick is to not over whisk as your marshmallow will start to set before you get it out of the bowl. (I learnt this the hard way the first time)
7. Once there is still movement pour into your baking dish. To smooth the top, spray a spatula with oil for easy gliding as the marshmallow will start to set, once smooth, sprinkle more arrowroot powder on top.
8. Cover and let your marshmallow set for 4-6hrs
9. Once set, sprinkle arrowroot powder onto a knife to prevent sticking and cut into desired size. Sprinkle a light dusting of arrowroot powder over the individual squares to make sure they don’t stick together, pat away in excess before storing.
Note: Store in an airtight container in the pantry for just over a week - as these have no preservatives or nasty ingredients, they wont last as long as store bought marshmallows. They taste so good anyway, so never last more than a week.
I’m obsessed with the creamy texture it adds to any hot chocolate, serve with cinnamon on top for a blood sugar balancing tasty treat.
