INGREDIENTS

2 cups organic desiccated coconut

3 Tablespoons Imbibe Miracle Collagen

1/2Cup Organic Coconut Cream/milk

2 Tablespoons Organic Maple Syrup or Honey

1 teaspoon Organic Vanilla Extract

pinch of Himalayan Sea Salt

1/2 Cup Cocoa Nibs

CHOCOLATE COATING

300grams Organic Dark Chocolate (70% or more is best)

1 Tbsp Coconut Oil

Himalayan Sea Salt

DIRECTIONS

In a bowl, blend the coconut, collagen, coconut cream/milk, maple syrup, vanilla extract and salt. Make sure your mixture is sticky so the balls will stick together (use more or less coconut cream/milk) to perfect the mixture. If it’s too wet, just add some more desiccated coconut.

Roll into balls and place on a lined tray

Place in the freezer for 30 minutes to Set

CHOCOLATE COATING

Melt the chocolate and coconut oil together, adding in a pinch of sea salt Before setting, dust more desiccated coconut and sea salt over each ball.

Dip the balls into the chocolate, before setting, dust more desiccated coconut and sea salt over each ball.

Place back into the freezer to set for 10 minutes

If you would like a double layer of chocolate, repeat the process.

Store in the refrigerator
